COLOMBIA AS A COFFEE ORIGIN IS A REAL PLEASURE TO WORK WITH THANKS TO THE NUMEROUS MICROCLIMATES THROUGHOUT THE COUNTRY, WE CAN PRETTY MUCH BUY FRESHLY HARVESTED COFFEE FROM THE DIFFERENT REGIONS ALL YEAR ROUND. WE GENERALLY LOOK TO THE SOUTHERN DEPARTMENTS OF HUILA, CAUCA, TOLIMA AND NARIÑO FOR OUR SUPPLY AS WE LOVE THE FLAVOUR PROFILES FROM THESE REGIONS. THIS LOT COMES TO US FROM THE COASTAL REGION OF NARIÑO IN THE SOUTH-WEST.

The proximity of this department to the Pacific Ocean has a huge impact on the climate found here. The days are hot whilst the nights are extremely cool which provides the perfect environment for high quality coffee as cherry ripening is slowed down adding real complexity and sweetness. Hols visited this region in 2014 directly after a stay in Huila and could not believe the difference in cup profile despite the relatively similar altitude/process and varietals found here. Nariño coffees can display a more complex acidity reminiscent of apples and berries in comparison to the more citric profiles of Huila.

This coffee comes to us from 50 farming families from the towns of Buesaca and Tablón de Goméz all of whom collect their ripe cherry before processing on their own micro wet mill. This lot is named ‘Los Rosales’ in reference to the abundance of roses that grow in the area, filling the area with a heady floral aroma that mimics the character of this beautifully complex coffee. We love this coffee for its versatility – it is beautifully balanced and therefore takes well to a dash of milk but is so clean and complex when served black too. There are juicy and sweet notes of pink lady apple with hints of lemon peel and butter. A coffee that really displays all we love about Colombia.

Our Colombian coffees are always fantastically versatile suited to all brew methods with their incredible character but balancing body – the character of these lots is unbelievable, with metal filter methods they tend to display a more fudgy profile with hints of lemon peel, on paper filter they can be beautifully buttery with really complex acidity and notes ranging from cherry to red apple to orange.
